Description
A five-ingredient dark chocolate soufflé for an easy weeknight dessert after a long day or to impress a date with minimal effort. Rich, decadent, and luxurious, this soufflé yields the best results with high-quality butter and dark chocolate.

- 2 ounces dark chocolate
- 4 tablespoons butter
- 1 whole egg
- 1 egg yolk
- 1/8 cup sugar
- 1 teaspoon flour
- Optional: ice cream, berries, and/or mint for garnish
Instructions
- Preheat over to 400°F.
- Melt chocolate and butter together in a double-boiler. You can simply fill a pot of water with about 1 inch of water and place a glass mixing bowl on top (so when you heat the water, the steam warms the bottom of the glass bowl but the water itself is not touching the bowl). Heat the water over medium-high heat.
- While the chocolate and butter melt, whisk together the egg, egg yolk, and sugar for 1 minute straight. This constant whisking will create an airy texture in the soufflé.
- Slowly combine the melted butter and chocolate with the egg and sugar mixture while whisking them together.
- Add flour and mix to combine.
- Lightly butter the inside of a ramekin. This recipe makes enough for 1-2 servings, so you could put it all in one or in two depending on the size of your ramekins (or whatever baking dish you’re using).
- Pour batter into a ramekin.
- Bake for 8-10 minutes.
- Top with ice cream, fresh berries, mint, or anything else you enjoy and serve with Port wine.
- Serve immediately!
Notes
- The great thing about this recipe is that if it’s slightly undercooked, it resembles a chocolate lava cake so it’s very hard to mess this up.
- Baking times will vary depending on your oven and the depth of the ramekin you’ve chosen so don’t be afraid to experiment – maybe you’ll like a more melted center, so test it out at different baking times!
