Baked Feta and Pistachio Crostini with Honey

Sweet and salty, creamy and crunchy, this baked feta with pistachio and honey is a perfect for a simple yet satisfying appetizer.

Ingredients

  • 1 block (200 g) of feta
  • 1/2 cup shelled unsalted pistachios, crushed
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon red pepper flakes (or more, to taste)
  • 2 cloves of garlic, minced
  • 2 tablespoons Olive oil
  • Salt and pepper
  • Honey
  • French bread for serving


Instructions

  1. Pre-heat oven to 400 degrees F.
  2. Place block of feta in a baking dish.
  3. Combine olive oil, half of the pistachios, oregano, thyme, red pepper flakes, garlic, salt and pepper. Stir to combine.
  4. Pour the olive oil and seasoning mix over the block of feta, being sure to cover it evenly.
  5. Bake for 10-12 minutes, then switch to the oven to broil and let it roast for about 4 minutes or until nicely browned.
  6. Remove from the oven and add the remaining fresh pistachios and drizzle with a generous amount of honey. 
  7. Serve immediately with French bread crostini and Prosecco.
